Foeniculum vulgare Florence Fennel 'Romanesco' is the finest and most reliable variety of this delicious and attractive vegetable, producing large, pure white sweet, tender bulbs. The soft green leaves can be used as a substitute for the herb fennel, as can the seeds. The bulbs, which have a mild aniseed flavour, ready to harvest in July -September are eaten raw in salads, steamed or roasted.
Plant 20-30cm apart in well-drained, humus-rich sandy soil in a sunny position. Keep well watered during dry periods. One the bulbs have become as large as golf balls by July-September, earth them up. Continue to do this until they are the size of tennis balls when they can be harvested by cutting the base with a sharp knife.
Plant outdoors from March to August and harvest from July to October.
