Beef burgers fit for a king!
- 1.2kg minced beef (not too lean as you need the fat for flavour and moisture)
- 6 large soft rolls
- Crisp salad leaves such as Baby Gem
- Sliced flavourful tomatoes
- Very thinly sliced red onions
- Wooden skewers
Divide the minced beef into 200g portions and with wet hands, squeeze and shape each portion into burgers about 12cm in diameter. Squeeze away - the more the meat is squeezed together, the less likely the burger will fall apart when cooking. Light the barbecue and wait until the coals are white hot. Cook the burgers, turning gently, until fully cooked. Season with a grinding of salt and black pepper.
Split the rolls (how about toasting them on the grill for a few seconds?), spread with a generous dollop of mayo on the base and top with lettuce, tomatoes and red onion slices. Finish with your delicious barbecued burger and top with the upper half of the roll spread with the ketchup. Secure with a skewer speared through a gherkin.
