This quintessential British dessert is strawberries and cream at its very finest.
- 3.5oz caster sugar
- 15floz double cream
- 4 meringue nests (broken into rough pieces)
- 8oz strawberries roughly chopped
- 1 teaspoon vanilla essence
For the puree:
- 5oz Caster Sugar
- 7oz Strawberries
Puree the 5oz of caster sugar and 7oz of strawberries together and put to one side.
Beat the remaining caster sugar, double cream and vanilla essence together to form soft peaks.
Stir in the strawberries and meringue.
In a serving glass, starting with the puree layer made earlier, alternately with the cream mix.
Garnish with mint and a handful of raspberries and cherries (optional) then serve.
